Gather the ingredients

Start by gathering the ingredients you’ll need for this comforting fish cake soup. For the broth, you’ll need chicken stock, garlic cloves, onions, celery stalks, carrots, bay leaves, salt and pepper. For the fish cakes, you’ll need cod filets mixed with fresh parsley and onion. You will also need a can of cream of celery soup to finish off the dish.

Prepare the fish cake and noodles.

Cut the cod into smaller chunks and mix it with chopped parsley and onion. Heat some oil in a large pan and add the fish cakes, cooking each side for 3 minutes until golden brown. Take out the cooked fish cake and set aside. Cook noodles in the same pan for 5 to 7 minutes, or until cooked but still al dente. Finally, add cream of celery soup to the stock mixture in a large pot and bring it to a simmer.

Sauté the ginger, garlic, and celery in oil.

Add in a tablespoon of vegetable oil to the same pan used to cook the fish cakes, turn the heat to low, and sauté the ginger, garlic, and celery together until fragrant. Once finished, add the stock mixture back into the pan and bring it to a simmer. Finally, add back in the cooked noodles and fish cake for an extra dimension of flavor!

Add the mushrooms and chicken broth to form the soup base.

Once the vegetables have cooked, add in a handful of white button mushrooms. Let the mushrooms cook for about two minutes before slowly adding in two cups of chicken broth. Simmer and add the fish cake, shrimp, and noodles before serving hot.

Once the vegetables, mushrooms and broth are combined, add in two fish cakes (halved), fifteen shrimp, and noodles of your choice. Simmer for an additional five minutes or until all ingredients are cooked through. Serve the soup hot and garnish with scallions and a squeeze of lime juice (optional). Enjoy!
